Porcini are considered the king of Italian mushrooms. They are commonly prepared and eaten in soups, pasta, or risotto. Porcini are low in fat and high in protein, vitamins, minerals and dietary fiber. Although they are sold commercially, they have not been successfully grown in cultivation. Available fresh in autumn in Central, Southern and Northern Europe, porcini are most often dried, packaged and distributed worldwide. Due to their meaty rich flavor, porcini keeps their flavor after drying. They may then be reconstituted and used in cooking.
